Chicken Skewers are such a fun and simple dish that are packed full of that char/grilled flavor! Chipotle flavored food is so popular right now because of its smoky spice! Honey and chipotle is such a delicious flavor combination! These are great when you are craving a grill flavor and you don’t have a grill! This recipe will help you obtain that flavor and that char on your stove top.

What is the difference in a jalepeño & a chipotle pepper?

This is such fun & interesting information because in truth- they are the same pepper! Yes! A chipotle pepper is essentially a smoked and marinated jalepeño pepper. This is why a chipotle pepper has that amazing smoky spice that we all love so much! When you buy chipotle peppers, make sure to buy them in adobo, because this means they are marinated longer & are tastier (in my opinion-of course).

So making these skewers takes very little time and effort and it has minimal ingredients! My favorite kind of meal! One other great thing is that you can just serve it over simple rice with a veggie and be done with it! So let’s get to it!

Step 1: Blend & Marinate

This is a fairly simple step that can be as long or as short as you really like. First, I blend the chipotle peppers, vinegar, juice of the orange, onion, garlic, salt and water on purée for 2 minutes or until the hot sauce is well blended. YES! This is chipotle hot sauce homemade, so you can definitely use this on anything you would like to add a chipotle flavor to. Once you have made the hot sauce dice up your chicken and place in a ziplock with your hot sauce and honey. I like to allow my chicken to marinate for an hour a room temperature. But anywhere from 30 minutes to 2 hours is great marinating time!

Step 2: Skewer & Sear

Once the chicken is done marinating, place it on skewers. If you are using wooden skewers make sure you soak them in water first! That will prevent them from burning. Preheat the oven to 375º. Then, preheat a cast iron skillet over medium high heat and put a little bit of olive oil in the bottom of the pan. Then, place your skewers down in your preheated pan. Rotate the skewer every 3 minutes so that each side of the chicken gets nice and golden brown.

Step 3: Bake & Serve

Once the skewers have been seared, pop the entire cast iron pan in the oven and cook until the chicken reaches an internal temperature of 165º. This takes about 5-8 minutes. Once they are done cooking take them out and serve them while they are hot with your favorite side! I love serving them with a veggie and rice, but they are really good with anything! Salt to taste!
