This recipe is simple, easy, and one of my absolute favorite recipes. I take it to BBQs, cookouts, parties, and make it as a fun side dish every now and then. The best part of this recipe is that you just boil potatoes, cook bacon and throw everything together! It’s great for a last minute, cheap, easy recipe to throw together for a party!

Growing up we always ate potato salad as sides at BBQ’s and I always disliked it! I’m not a huge fan of mustard flavor in my potatoes. I know I am weird. But I was determined to like potato salad! So I slowly adapted my potato salad into this! It’s basically like a delicious loaded baked potato! So if you want to try something new and different in your potato salad life! I would suggest this short and sweet recipe for you!
Cowboy Potato Salad

This recipe is simple and delicious! It’s even better when you make it the day before!
Ingredients
- 48 oz. small red russet potatoes
- 1 cup sour cream
- 1 cup sharp cheddar cheese, shredded
- 1 bundle of green onion, chopped
- 6 strips of bacon
- 3/4 teaspoon salt
- 3/4 teaspoon pepper
- 1 packet of buttermilk ranch dressing packet, dry mix
Instructions
- First set a pot with 4 quarts of water over medium-high heat.
- Then, cut your small russet potatoes into fourths and add into boiling water. Boil for 8 minutes or until soft. Don’t over boil because they can become mushy.
- While potatoes are cooking, cook bacon strips on the stove top. Chop your green onions. When bacon is done cooking chop into bacon bits.
- Drain your potatoes and place in a large bowl to cool. Cool at room temperature for a least 30 minutes.
- Add in sour cream, cheddar cheese, green onion, chopped bacon bits, salt, pepper, and buttermilk ranch dressing packet.
- Put in the refrigerator for 45 minutes or until you’re ready to serve.
