Making a frittata for a weekend breakfast or brunch is a super healthy and delicious option! I love frittatas because you can make them so quickly! With springtime flavors this frittata is to die for. Recently my husband and I moved into a new house and we now own an asparagus garden. When I say we have more asparagus than we know what to do with… I am not lying! It’s crazy! So we have had to come up with some pretty creative ways to eat asparagus, hence why I put them in this frittata! And YALL I am so glad I did! The asparagus really adds delicious flavor and earthiness. It pairs especially well with the rich ham and cheeses in this frittata!
Don’t Overbake:
Be really careful when you are baking the frittata. If you do over bake a frittata it can be very dry. Adding goat cheese also helps to add more moisture to the frittata!


One of the best weekend brunch or breakfast recipes is one you can dump in a pan and cook in the oven. It makes the entire house smell amazing and it is so quick and easy! That is this frittata recipe!
Supplies:
- 9-Inch Round Baking Dish or Pie Dish
- Bowl
- Whisk
- Oven
- Knife
- Cutting Board
Ingredients:
- Eggs
- Heavy Cream
- Goat Cheese, crumbled
- Ham, diced
- Cherry Tomatoes, halved
- Rosemary, minced
- Asparagus, diced (or Spinach-shredded)
- Salt
- Pepper
Step 1: Preheat & Prep
Preheat the oven to 450º. Crumble your goat cheese. Halve your tomatoes. Mince your rosemary. Dice your asparagus.
Step 2: Whisk
In a bowl, whisk eggs and heavy cream together until they are well combined and fluffy.
Step 3: Add in Toppings
Add in the ham, goat cheese, tomatoes, rosemary, asparagus (or spinach), salt, and pepper. Mix until well combined.
Step 4: Pour
Pour all of the ingredients into a grease 9-inch round pie pan.
Step 5: Cook
Cook in the oven for 20-25 minutes or until completely firm in the middle. Serve while warm!
*This is also a great make ahead breakfast to eat throughout the week!
Saving for later:
This is an incredible meal prep breakfast as well. It makes 8 servings, so it is incredibly easy to cook and eat throughout the week. It saves easily in the refrigerator in a sealed/air-tight container for up to 5 days. It also will keep in the freezer in a sealed/air-tight container for up to a month. To reheat from frozen, simply microwave 1 slice at a time for 45 seconds.
