I say it all the time, but eating healthy doesn’t have to be boring. This is one of those recipes that will spice up your weeknight dinners, but it won’t take forever to cook or prep for! It’s low-carb, clean, healthy, and most of all delicious! Scallops always take on the flavor of whatever you cook them with! This is great when you are cooking with the strong flavors of pesto & brown butter like in this recipe! Zoodles are also known to be pretty bland at times… not these zoodles. They have so much more flavor just because of a few simple steps and ingredients. You’ll be surprised at how delicious they are with very little in them!

Some of my favorite things to cook are easy weeknight meals that I just make up on the fly. This was one of those recipes, & it’s a quick & fun/fancy weeknight meal the whole family will enjoy. You can cook this recipe up with 20 minutes & very few ingredients.
Supplies:
- Frying Pan
- Cast Iron Skillet
- Tongs
- Food Processor or Blender
Ingredients:
- Scallops
- Zucchini
- Garlic Clove
- Butter
- Salt
- Pepper
- Basil
- Olive Oil
- Juice of Lemon
- Pine Nuts
Step 1: Spiral & Sauté
Preheat a large frying pan over medium high heat and add olive oil. While your skillet is preheating, spiral your zucchini (or buy it already spiraled), dice your shallot, and mince 1 garlic clove. Add the shallot to the the pan and sauté for 3 minutes or until the shallots look soft. Then, add the minced garlic and sauté for one more minute. Once you have sautéd your shallot and garlic, add in your zoodles and sauté for 2 minutes. Then, put a lid on your frying pan and continue cooking on low for 10 minutes.
Step 2: Make your Pesto
In a food processor, combine basil leaves, olive oil, pine nuts, 1 garlic clove, lemon juice, 1/4 tsp salt, and 1/4 tsp pepper. Pulse until it created a thin paste.
Step 3: Sear your Scallops
Preheat a cast iron skillet on high high heat. Place butter into the pan and and brown the butter for 2-3 minutes. While your butter is browning, pat your scallops dry and sprinkle them with salt and pepper. Once your butter is browned, sear your scallops on each side for 90 seconds. Set them aside when they are done cooking.
Step 4: Assemble
Sprinkle your zoodles with salt and pepper. Then, place your cooked zoodles in a bowl. Top with scallops and pesto. Serve while they are warm!
