This week we really fell off the wagon with our eating habits because we have been moving into a new house and I am a teacher heading back to school in the middle of COVID-19… YEAH CRAZINESS AROUND HERE! This week I wanted cheap, easy recipes to just survive (that are DELICIOUS OF COURSE), I know we have all been there, so this recipe is for you! It’s also a recipe for LATE NIGHT MUNCHIES.. cause I know we’ve all been there too… shh, I won’t tell anyone! The cool thing about this recipe is that it is gluten free because I do use the almond flour tortillas from Siete. If you can’t find them or would rather have flour or corn tortillas… feel free to switch it, just remember flour tortillas are not gluten free! I hope you love this little cheat!
Equipment for this recipe:
- Frying Pan
- Saucepan
Ingredients for this recipe:
- Chicken Breasts
- Taco Blend Cheese
- Almond Flour Tortillas (I use Siete Brand) or flour/corn tortillas if you want to swap
- Taco Bell Mild or Hot Sauce
- Butter
Substitutions:
Chicken Breast is easy, but you could also do flank steak or sirloin and fry it in the frying pan first with a little hot sauce and then put it inside. OR if you’re a vegetarian just skip the meat all together and have a cheesy hot sauce quesadilla!
Feel free to use any cheese you like! Taco blend cheese taste the closest to the blend they use at Taco Bell, so that is why I chose it!
Almond Flour Tortillas can be hard to find, so corn will also keep this recipe gluten free! Or flour if you are not worries about gluten!
Taco Bell Hot Sauces are all now sold at certain grocery stores, which is awesome! BUT if you can’t find it at your grocery store, feel free to use any hot sauce or mild sauce you like!

Ingredients
- 1 pack of Siete Almond Flour Tortillas
- 1 lb chicken breasts
- 3 tbsp hot or mild taco bell sauce or other hot sauce
- 1 cup taco blend cheese or colby jack
- 2 tbsp butter
Instructions
- First, bring a large pot of water to a boil and boil your chicken for 10 minutes.
- Drain the water from the chicken and shred it. Add your taco bell hot sauce to the shredded chicken.
- Preheat a frying pan on medium heat and melt 1/4 of your butter. Place one almond flour tortilla down in your pan and top with 1/4 of your cheese and 1/4 of your chicken. Put another tortilla on top. Cook for about 3 minutes then flip and continue cooking for another 2-3 minutes or until the cheese is nicely melted. Repeat this process 4 times for 4 servings.
- Serve while hot! Add more hot sauce or even sour cream if you like!
