This is totally my mother-in-law’s recipe! I asked her for permission to post this one, because it is awesome! How often are you so busy, but you need a low ingredient, semi-healthy, fast meal… This is that meal. You can easy throw this together as you’re getting ready to rush out the door! My husband and his brother coined this recipe as Tuesday Night Meal, because they were always rushing out the door to Scouts and their mom would throw this together in 20 minutes and they would eat in 10 and out the door they went! It’s that quick ya’ll! It’s also an easy meal to improvise if you’re missing an ingredient! Aren’t those the best kind? I think so!
Equipment for this recipe:
- Large Pot
- Large Skillet
- Spatula or Wooden Spoon
Ingredients for the recipe:
- Olive Oil
- Angel Hair Noodles
- Stir Fry Vegetables
- Chicken
- Garlic Powder
- Ground Ginger
- Sesame Seeds
- Salt
- Pepper
Substitutions:
Like I said above this recipe is the easiest to substitute things to make it work for what you have!
Angel Hair Noodles are my favorite because they are thin and absorb flavor well, but you could easily use any pasta noodles you have on hand! Don’t have pasta? You can also use rice or cauliflower rice! Want lower carb? Use cauliflower rice!
Stir Fry Vegetables are definitely easy to use for this and super cheap in the freezer section. BUT, if you don’t have that on hand, you could easily use just broccoli or any vegetable you have on hand. Last time I made this, all I had was a can of mixed vegetables (with corn, carrots, peas, and green beans), so that’s what I used!

Ingredients
- 2 tbsp olive oil
- 16 oz. Angel Hair Noodles
- 12 oz. Frozen Stir-Fry Vegetables
- 3 large chicken breasts, diced
- 2 tsp garlic powder
- 1 tbsp ground ginger
- 3 tbsp sesame seeds
- 2 tsp salt
- 1 1/2 tsp pepper
Instructions
- Fill a large pot with water and bring to a boil. Meanwhile, heat olive oil in a skillet over medium high heat. Cut your chicken breasts into half inch diced pieces.
- Once the water comes to a boil, add in your noodles and boil for 8-10 minutes or until pasta is al-dente.
- Meanwhile, put your diced chicken into your hot skillet. Do not disturb for 2-3 minutes. Stir the chicken and sprinkle with garlic powder, ground ginger, salt, and pepper. Stir again and cook until chicken is cooked through. Add your stir fry vegetables and cover and continue cooking for 4-5 minutes.
- Drain your noodles and toast your sesame seeds.
- Put your chicken stir fry mixture on top of your noodles and sprinkle with sesame seeds. Serve while hot!
