Yummy and delicious side dishes are always a bonus! Lately, I have been trying really hard to create fancier side dishes that aren’t just plain salt and peppered veggies… I think we can all agree that gets a little boring! I love this side dish because it goes so good with steak, salmon, shrimp, pork chops or whatever food you’re cooking! This recipe is also very quick and easy to make! That’s what I love about it! I usually have these ingredients on hand just in case I need to make this recipe for a last minute dinner party!

Ingredients for this recipe:
- Butter
- Shallot
- Garlic
- Heavy Cream
- Beef Broth
- Spinach
- Parmesan Cheese
- Salt
- Pepper
Substitutions:
Shallot provides a strong onion flavor with less crunch. If you want a lighter onion flavor, you could switch it out for 1/4 cup diced white onion. This will give the orzo more texture though, so keep that in mind.
I like beef broth in this recipe, but feel free to use vegetable broth or chicken broth instead.
Spinach gives this orzo a delicious flavor and texture. If you would like a different vegetable you could swap the spinach out for steamed broccoli or peas.
Parmesan cheese adds a full flavored finish. If you don’t want cheese or the strong flavor, feel free to omit this. The orzo will still be creamy from the heavy cream!

Ingredients
- 2 tbsp butter
- 1 shallot, diced
- 1 garlic clove, minced
- 1 cup orzo
- 1/2 cup heavy cream
- 1 1/2 cups beef broth
- 1 cup spinach
- 1/2 cup parmesan cheese
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Put a dutch oven over medium high heat and brown 2 tbsp of butter. This takes about 2-3 minutes. The butter will look brown and foamy when it is ready.
- Dice your shallot and mince your garlic and add them to the dutch oven. Stir for about 1 minute to saute.
- Add orzo and toast the orzo for 2 minutes, stirring constantly.
- Then add the heavy cream and beef broth. Put a lid on the dutch oven and cook for 10 minutes. Stir every 2-3 minutes.
- After 10 minutes, add spinach, parmesan, salt, and pepper and stir well.
- Serve while warm!
