Lately, I have really been into meal prepping on Sundays. Being a teacher, I don’t have much time during the week to cook or get lunches ready. These meatballs have been my go to lunch meal prep for a few weeks now. The best part about these, is that you can add any sauce to spice them up or slightly change the recipe. It spices things up just enough for me, someone who doesn’t love leftovers, to eat throughout the week without getting sick of them! Not to mention, they are absolutely tasty and super healthy! YUM!


To start off, these are the simplest meal prep food to make! They are quick with simple ingredients! It takes only 30 minutes to make these and it meal preps enough for one person for 4 days of lunches! Such a sweet deal! Let’s talk ingredients and supplies:
Supplies:
- Large Mixing Bowl
- Small Mixing Bowl
- Sheet Pan
- Oven
Ingredients:
- Ground Chicken (Ground Turkey also works well)
- Almond Flour
- Garlic Powder
- Onion Powder
- Egg
- Salt
- Pepper
- BBQ Sauce (or Buffalo Sauce is also great)-I like whole 30 approved varieties because their is less sugar
- Avocado Oil
Other Toppings:
- Ranch
- Avocado Ranch
- Blue Cheese
- Blue Cheese Crumbles
Step 1: Mix Together
First, mix the ground chicken, 3/4 cup of almond flour, garlic powder, onion powder, egg, salt, and pepper in a large mixing bowl. Incorporate the ingredients together with a fork until it is mixed very well.
Step 2: Make the Meatballs
Roll the mixture into meatballs. Dust each meatball with almond flour to make the outside more firm.
Step 3: Bake
Spray or rub the sheet pan with avocado oil. Place the meatballs on the sheet pan. Bake at 400º for 15 minutes. Turn the meatballs over and continue baking for 15 more minutes.
Step 4: Add the Sauce
Take the meatballs out of the over and roll them in your chosen BBQ or Buffalo Sauce. Top them with desired toppings and serve!
Meatballs Tips and Tricks:
If the meatball mixture seems too sticky, add a tablespoon more of almond flour before rolling the mixture into balls. Don’t add too much almond flour or it will cause the meatballs to be crumbly. Also, make sure to roll each meatball in more almond flour to dust. This helps them to not stick to the pan during baking.
