Greek chicken is an easy weeknight meal or prep ahead lunch that I love to make when I want something tasty and quick. Since I am a teacher, this is something I can easily prep on a Sunday and take for lunch a few times during the week. I came up with this recipe because I LOVE the creamy cucumber tomato salad! I had to come up with a protein that complemented this cucumber tomato salad. SO this greek chicken is one of my absolute favorites! If you want to add a carb to this recipe, roasted potatoes are also great with it!

Substitutions:
Chicken is great with this recipe and it is quick and easy, but if you want to swap out for another protein, you can swap for pork chops or flank steak. For the pork chops, make sure you cook until an internal temperature of 145º. For flank steak, make sure you cook to your desire temperature, my desired temperature is medium rare, this is cooked with a warm red center.
