Lately, I have been loving a good sunday morning brunch and I LOVE savory brunch! Something about a delicious tart with a mimosa on a weekend morning, is just the best thing in the world! Also this particular tart is easy and takes 5 minutes to prepare and then only 30 minutes to bake! It’s perfect if you have a last minute friend coming over for breakfast or brunch. It is also a great for a last minute appetizer! IT is ALSO so easy to switch up if you are missing an ingredient! AND there is only 4 ingredients! How awesome is that!? I hope you love this recipe as much as I do!

- Cookie sheet
- Cookie Cutter
- Oven
- Knife
Ingredients for this recipe:
- Frozen Pastry Dough or Frozen Pie Crust Dough (Make sure it is the dough not precooked!)
- Grape Tomatoes
- Brie (I have substituted for cream cheese and goat cheese before and both are delicious too)
- Fresh Rosemary
Substitutions:
I like to use the pastry dough if I can find it, it has a better flavor, but sometimes it can be hard to find. In these cases I use Pie Crust Dough.
Grape Tomatoes are amazing with this recipe but if you want something more sweet you could swap the tomatoes for berries.
Brie adds a nice tart pungent flavor, but I know it isn’t for everyone! Goat cheese or cream cheese are also great substitutions!

Ingredients
- 1 frozen pastry dough or 1 frozen pie crust dough, defrosted
- 3 ounces of grape tomatoes, halved
- 4 ounces of brie cheese
- 1 tbsp fresh rosemary
Instructions
- Preheat an oven to 400º. Prep and grease a cookie sheet. Cut the brie into 1/4 inch slices. Cut your grape tomatoes in half. Chop your rosemary very fine.
- Unroll your pasty dough and form your pastry in a shape you like. I like either a half moon shape or a rectangular tart. This is up to you. Place it on the cookie sheet.
- Top the sliced brie, halved tomatoes, and minced rosemary on your pastry dough.
- Cook the pastry dough in the oven for 30 minutes or until slightly browned.
- Cut into 6 slices and serve! Be careful the cheese can be like lava at first!
