These pizza stuffed mushrooms are so good! I absolutely love them! One night I was eating with my in-laws and they were making stuffed calzones! I knew the pizza dough would probably hurt my stomach, since I don’t eat gluten that often and it was a lot of it! SOO… I brought portobello mushroom caps and stuffed them with the mixture I would’ve put into my calzone. And now I have these awesome pizza stuffed mushrooms! So good! I hope you love them!

Ingredients for this recipe:
- Mushroom Caps
- Olive Oil
- Garlic Clove
- White Onion
- Ground Sausage
- Spinach
- Tomato Sauce
- Pesto
- Italian Seasoning
- Salt
- Pepper
- Mozzarella
Substitutions:
Mushroom caps are great because they don’t carry a ton of flavor into the dish and they are a great vessel. If you are not a mushroom fan you could stuff bell peppers. Switch out the mushrooms for 4 bell peppers of your choice.
I love sausage in this recipe, but you could easily swap it out for hamburger meat or even sliced pepperoni/salami. If you do pepperoni and salami just skip the browning meat step and go straight into adding all the ingredients together into the frying pan to wilt the spinach.
If you’re not a fan of pesto, you can simply leave it out or just use a few fresh basil leaves.
Mozzarella is a great cheese for this recipe because it doesn’t carry a strong flavor. If you like a stronger flavored cheese, you could substitute for parmesan or asiago. If you like a creamier cheese, could could top with a small dollop of ricotta!

Pizza Stuffed Mushrooms
Notes
This recipe requires pesto. You can use store bought pesto or make your own using my 3-minute pesto recipe!
Ingredients
- 8 portobello mushroom caps
- 1 tbsp olive oil
- 1 garlic clove, minced
- 1 small white onion, diced
- 1 lb ground sausage
- 1 cup of spinach
- 1 8 oz. can of tomato sauce
- 2 tbsp of pesto (my 3-minute pesto recipe if you want to make it)
- 1 tbsp italian seasoning
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 cup of mozzarella
Instructions
- Preheat your oven to 350º and grease a 9×13 pan. Put a medium frying pan over medium high heat. Dice your onion and mince your garlic.
- In the frying pan, add your olive oil and diced onion. Sautee for 3-5 minutes or until the onions become translucent. Add your minced garlic to the pan, and continue to sautee for 30 seconds. Add the ground sausage to the pan and cook until browned. Add the spinach, tomato sauce, pesto, italian seasoning, and salt and pepper to the pan and combine together until the spinach is wilted.
- Next, stuff the mixture into the mushroom caps and place each stuffed mushroom cap into the 9×13 pan.
- Sprinkle the mushroom caps with mozzarella cheese and bake them in the oven for 15-20 minutes or until the cheese is nicely browned.
- Serve while warm!
