I LOVE THIS RECIPE! When my husband and I decided to eat healthier and less carbs, we were so sad to find out we were giving up meatballs! The excess amount of breadcrumbs just wasn’t fitting into our new lifestyle on a regular basis, (not that we don’t splurge every now and then).
So.. these meatballs are low carb, delicious, and guilt free! I mean how could you not love that! The homemade tomato sauce is also to die for! Typically my husband and I will eat the meatballs with the sauce and put it over zucchini noodles!
Now… a lot of people ask, what is the difference between almond meal and almond flour… well the short answer is there isn’t one. So either will work for this recipe! I hope you love it!!
Almond Meal Meatballs
Serves: 12
Ingredients:
1 lb ground beef
1 lb ground pork
2 eggs
3/4 cup almond flour
1/2 teaspoon dried oregano
2 large minced garlic cloves
1/2 cup fresh basil
1/2 cup minced onion
3/4 teaspoon of salt
1/2 teaspoon of pepper
1 tbsp olive oil
Homemade Tomato Sauce
Serve: 12
Ingredients:
1 28 oz can of whole tomatoes or 10 fresh, ripe tomatoes, chopped
1/2 cup onion, chopped
2 large cloves of garlic
1/2 cup fresh basil
1 teaspoon oregano
1 teaspoon of salt
3/4 teaspoon of pepper
1 tbsp olive oil
1/2 cup dry red wine
Instructions:
In a mixing bowl, combine ground beef, pork, eggs, almond flour and mix together with your hands. Add in dried oregano, basil, onion, salt, pepper and mix again until well incorporated. Put a medium sized pan on medium-high heat with about 1 tbsp olive oil. Once the pan is preheated, slowly ball the meat mixture using a small cookie dough scoop, and place in the hot pan. Rotate the meatballs every few minutes until all sides are browned.
Meanwhile, preheat a separate pan on medium-high heat. Add 1 tbsp of olive oil. Add onions and sauté for 2-3 minutes or until clear. Add in minced garlic and sauté for 30 seconds. Add in tomatoes, oregano, salt, and pepper. Simmer the sauce, until tomatoes break down. Add in dry white wine and stir.
When meatballs are browned on all sides, place the meatballs in the sauce. Cover with a lid and simmer for 25 minutes. Serve over zucchini noodles or just eat them by themselves! I always sprinkle a little Parmesan on mine! It’s delicious!
