A couple months back, my husband and I took our second trip to Mexico to our favorite resort, Unico 20º 87º. At the resort they have some of the best food I have ever had in my life. Including the Sopes they serve at breakfast. Now, 7 months after our trip, I find myself constantly craving these little delicacies! Finally I decided it was time to experiment with them a little bit on my own. While this recipe is a little different that the traditional recipe, I used almond flour instead of masa, it is still just as tasty and delicious. It just now has a few fewer carbs. When making sopes, you really get to be creative with toppings. I decided to keep these pretty simple and somewhat authentic by using the black bean purée and chorizo. However, you could really add anything you see fit. Typically, sopes are a Mexican Street Food, but I like to think of them as a fun snack or appetizer or even a light meal. We would even order them for breakfast on our trip in Mexico. Regardless of when or where you eat them, they are a tasty a fun way to spice up your cooking!
Using Almond Flour:
Obviously I decided to use almond flour versus masa. This is definitely less traditional, but I really wanted to make these lighter on carbs. One thing to note is that you cannot swap out the almond flour for masa in this recipe. This recipe is specific to almond flour.


Making these is really just prep work & honestly it is basically like making pancakes! It doesn’t take too much effort but they are fun to make and the whole family will enjoy them because they are customizable!
Supplies:
- Frying Pan
- Large Mixing Bowl
- Blender or Food Processor
- Knife
- Cutting Board
Ingredients:
- Almond Flour
- Baking Powder
- Salt
- Eggs
- Olive Oil
- Canned Black Beans
- Chorizo
Optional Toppings:
- Shredded Lettuce
- Diced Tomato
- Diced Red Onion
- Diced Jalapeño
Cotija Cheese - Cilantro
- Sour Cream
- Hot Sauce
- Salsa
- Lime Juice
- Queso
- Avocado
Step 1: Mix the Sopes Dough & Preheat
First, mix your almond flour, baking soda, 1/2 tsp salt, and eggs in a mixing bowl. Add in 3/4-1 cup water until a thick dough forms. Preheat a frying pan over medium high heat and add in your olive oil.
Step 2: Fry up your Sopes
Now these sopes are a little more like pancakes than little cups because the batter is less malleable. Pour 1/4 cup of dough, flattened into the frying pan and cook on one side for 3 minutes, then flip to the other side and continue cooking for 3 more minutes. While the sopes are cooking on the final side, you can take a spoon and press down the center of the sopes. This will help create more of a cup for your ingredients. Set your sopes to the side when they are done cooking.

Step 3: Cook your Chorizo
In your frying pan brown your chorizo. If you don’t have chorizo, you can also do sausage with chorizo seasoning. Siete makes a great brand of chorizo seasoning. That is actually how I made mine! I love Siete brand anything! So tasty!
Step 4: Make Black Bean Spread
Put your black beans in your food processor or blender with 1/2 tsp of salt and blend until smooth.
Step 5: Prepare your Toppings
For us we decided to use red onion, shredded lettuce, diced tomato, diced jalapeño, cotija cheese, lime juice, cilantro, and sour cream! It was absolutely delicious!
Step 6: Assemble
Take one of your sopes and top it with beans and chorizo. Then top with your toppings of choice!
