First of all, goat cheese is absolutely amazing and one of my favorite foods ever! I love how goat cheese goes with most foods. It’s delicious when it’s sweet, it’s delicious when it’s savory or mixed with herbs! I love stuffing things with goat cheese: stuffed mushrooms, Goat Cheese & Rosemary Savory Rolls, tomatoes, chicken, Goat Cheese & Chive Twice Baked Potatoes, Goat Cheese & Rosemary Mushroom Tartlets… it just adds amazing flavor! These stuffed tomatoes are really such an easy recipe & they are healthy & gluten free!
Dinner Party Ideas:
If you are hosting a dinner party. The best plan is to have at least 2 appetizers, 1 large main protein, 3 sides, and 2 desserts. This gives variety and choices to your guests. These tomatoes make for a great appetizer option. This option also fits in most dietary requirements because they are also gluten-free and low carb. When planning for a dinner party, make sure at least one of the appetizers is gluten-free or lower carb/lighter. This ensures two things: there will be something for everyone and your guests won’t fill up on heavier items before the main meal. Appetizers are an important part of a dinner party and these tomatoes are a great option!
Why Almond Flour?
Almond flour adds a little crunch and texture to the tomatoes. I like almond flour because it mimics bread crumbs, but it’s a healthier option. If you would like you could definitely swap this out for traditional bread crumbs. Just keep in mind this will add more carbs and calories (not a bad thing-just your preference).

Supplies:
- Knife
- Bowl
- 8×8 Baking Dish
Ingredients:
- Campari Tomatoes
- Goat Cheese
- Garlic Clove
- Fresh Rosemary
- Almond Flour
- Coarse Salt
- Pepper
Step 1: Prep
Preheat the oven to 375ยบ. Scoop out the inside of the campari tomatoes. In a small bowl, combine the goat cheese, garlic clove, and rosemary.
Step 2: Stuff
Stuff the mixture into the tomatoes. Place the tomatoes into a 8×8 inch baking dish. Top the tomatoes with almond flour, salt, and pepper.
Step 3: Cook
Cook the tomatoes in the oven for 30 minutes. Allow to cool for 5 minutes and serve while warm.
