Ya’ll lately goat cheese and potato recipes have been just amazing to me! They are so full of flavor and I have been wanting to create my own for some time. Another recipe with potatoes that has been forever one of my favorites is twice baked potatoes! Ever since I was a little kid, I have LOVED twice baked potatoes! The best part about them, is that you can literally make them however you want! When I was growing up, my cousins lived in St. Louis. We would frequently make the drive to go visit them with my grandparents. On one visit, we ate at this little Italian restaurant (I wish I remembered the name). At this restaurant, they had the most amazing twice baked potatoes. I wish I could find them today, but I am pretty sure this restaurant is no longer around today. So my plan is to make my own twice baked potatoes until I figure out that amazing recipe! Here is my first attempt & let me tell you it is an amazing recipe! With Valentine’s day around the corner, it is a perfect fancy side item!

Ingredients for this Recipe:
- Russet Potatoes
- Olive Oil
- Herb or Regular Goat Cheese ( I personally love the extra herbs in herb goat cheese if you can find it)
- Sour Cream
- Butter
- Chives or Green Onion
- Salt
- Pepper
- Parmesan
What makes it a “Twice” baked potato?
So in order to have a twice baked potato, you do exactly that… you bake it twice. First, you bake it to cook it. Then, you scoop out the insides, mix it with creams and butters and cheeses and toppings, and then you put it bake in the oven, top it with cheese and bake it again. The longer you bake it, the more brown the cheese on top gets, making it incredibly flavorful! If you haven’t done potatoes this way, you definitely should give it a try!

Honestly I think I love this recipe, because it is amazing alongside fancy date night proteins! It is so fun to have date nights in and make really fun fancy food you would’ve paid WAY too much money for at a restaurant (DISCLAIMER-I LOVE RESTAURANTS TOO-SUPPORT LOCAL BUSINESSES IN YOUR AREA). Goat Cheese & Chive Twice Baked Potaotes
Notes
For a little bit creamier potato, you can add a little more sour cream as needed. Add 1 tbsp at a time.
Ingredients
- 6 Medium Russet Potatoes
- 1 tbsp Olive Oil
- 2 tsp Coarse Salt, divided
- 8 oz. Herb & Garlic Goat Cheese (or regular goat cheese will work also)
- 1 cup Sour Cream
- 6 tbsp Unsalted Butter
- 1/4 cup Green Onion, diced
- 1 tsp Pepper
- 1/2 cup Parmesan
Instructions
- Preheat your oven to 400º. Coat each potato in olive oil and a pinch of salt. Wrap each potato in aluminum foil. Poke three hole in each potato using a fork. Put the potatoes in the oven and cook them for 1 hour and 15 minutes.
- Once the potatoes have baked, take them out of the oven and carefully unwrap them from the foil. Be careful the foil will be very hot. Cut each potato down the center to open them, but do not cut in half. Scrape out the center of the potatoes and put in a bowl. Set the skins aside.
- In the bowl with the potatoes, add 1 tsp coarse salt, goat cheese, sour cream, butter, green onion, and pepper. Stir until the mixture is mixed together completely and creamy.
- Scoop the potato mixture back into the potato skins. Top each potato with parmesan cheese. Put the potatoes bake in the oven at 400º for 15 minutes or until the cheese is golden brown.
