During the summer, my favorite thing is peaches! They are so tasty with savory dishes or sweet dishes! Goat Cheese is also great with savory or sweet things, so I decided it was time to make a tasty appetizer with both! These crostinis are simple, yet elegant and are sure to impress!


Making these crostinis is very simple, but they seem so fancy, which is why they are an absolute favorite of mine. Taking them to parties is always a fun talking piece!
Supplies:
- Cookie Sheet
- Knife
- Cutting Board
- Grated Cast Iron
Ingredients:
- French Bread
- Goat Cheese
- Olive Oil
- Honey
- Red Pepper Flakes
- Fresh Basil
- Peaches
Step 1: Prep & Toast
First, put the goat cheese, olive oil, honey, red pepper flakes, and basil (full leaves) in a bowl- do not mix yet- and allow it to sit for 20-30 minutes; this extra time is not necessary but it does infuse the flavors more! Then, slice the french bread into 1/2 inch slices. Place the slices on a cookie sheet and place in the oven on low broil for 3 minutes, and flip and toast the other sides of the toasts for 3 minutes. While the bread is toasting, peel and slice your peaches.
Step 2: Stir It Up
Next, dice the basil into thin slices and place it back into the goat cheese. Mix the goat cheese mixture together with a fork until well combined.
Step 3: Grill
Then, preheat a grated cast iron pan over medium high heat. Sear the peaches on one side for one minute and flip and sear again for one minute.
Step 4: Assemble
Spread 1/2 tbsp of the goat cheese mixture on a toast and top with a peach! Serve immediately!
Marinating Goat Cheese Tips & Tricks:
Marinating Goat Cheese seems like it would be difficult, but it is actually very simple and it will completely change the flavor of the goat cheese from normal to WOW! The best tip is to allow the goat cheese to sit in the marinating ingredients for about a half hour before you stir it all together. While this is not necessary, it will make the flavors stronger than if you just mix it straight in!
