Easy weeknight dinners are my jam! It is so important to have at least 2 weeknight meals that take less than 20-30 minutes just to save your sanity. While this tenderloin does take about 40 minutes to cook in the oven or on the grill, it only takes about 5 minutes and 4 ingredients to throw together! It is one of our favorite go-to’s. It seriously doesn’t compromise on flavor!
Equipment for this recipe:
- Oven or Grill
- Baking Pan
Ingredients for this recipe:
- Pork Tenderloin
- Dijon Mustard
- Honey
- Rosemary
- Bacon
- Salt
- Pepper
Cooking Ahead:
This pork tenderloin is great to grill ahead and reheat in the oven. It is pretty simple to reheat in the oven later. Sometimes I will grill it ahead and store it in the refrigerator for up to 5 days or the freezer (tightly wrapped in an airtight storage bag or saran wrap) for up to 1 month. If it is frozen, allow it to thaw over night in the refrigerator before reheating in the oven. Then, I will reheat the whole tenderloin in the oven on 375º for 20 minutes. If you would like to reheat pieces of the tenderloin at a time, it is best to reheat them in the oven or in a toaster oven. You can put smaller 1-inch thick pieces in the toaster oven or oven for 5 minutes.
Side Dishes to go with it:
Pistachio Encrusted Zucchini Fries
Pecan, Brown Sugar, and Goat Cheese Roasted Carrots
Crispy Parmesan Sweet Potatoes
Shallot and Bacon Brussel Sprouts
