Cranberries and Rosemary are such a great flavor combination, especially in the winter time! It is one of my absolute favorite flavor combinations to work with in the winter. AND THE SMELL IN YOUR KITCHEN!! AHHH it’s absolutely amazing! My husband always says he wishes we had a candle that was butter and rosemary flavored. I would love that too haha! In this recipe, the cranberries have amazing health benefits and this Cranberry Rosemary Chicken Thighs is a super healthy meal that isn’t super difficult to throw together. This recipe is quick, easy, and FULL of flavor!

Ingredients for this Recipe:
- Chicken Thighs
- Rosemary
- Cranberries
- Garlic Cloves
- Butter
- Salt
- Pepper
Substitutions:
This recipe is easy to substitute a few things here and there because there is very little ingredients.
Butter- If you don’t want to use butter, you can swap the butter for ghee or avocado oil. These oils are still high and fat and will create the same crispy skin on your chicken thighs.
Rosemary- If you do not like rosemary you can easily swap the rosemary out for thyme! Still yummy and delicious!

Cranberry Rosemary Crispy Chicken Thighs
Notes
It is so important not to burn your butter! There is a huge difference in flavor between regular butter, browned butter, and burnt butter! The time difference is just about 30 seconds too, so be very careful!
Ingredients
- 8 Bone-In Chicken Thighs
- 2 Rosemary Sprigs
- 1/4 cup Cranberries
- 6 tbsp Salted Butter
- 2 large Garlic Cloves
- 2 tsp Course Salt
- 2 tsp Ground Pepper
Instructions
- Preheat the oven to 400º and preheat a large cast iron pan over medium high heat. Peel your garlic cloves. Salt and pepper both sides of your chicken thighs.
- Add the garlic cloves, rosemary springs, and butter to the pan and allow the butter to brown for 2-3 minutes (don’t let it over brown).
- Once the butter has browned, add in the chicken skin side down and brown for 4-5 minutes. Flip the chicken over. Then, add in the cranberries.
- Place the entire cast iron in the oven for 20 minutes or until it reaches an internal temperature of 165º.
- Serve while warm!
