One of my favorite things… A ONE PAN WONDER! You will see a lot of my dishes use one pan or very few pieces of equipment. I don’t like doing dishes, so this is my solution! I know we can all relate to that! I also cook this in my cast iron, which is the easiest clean up ever! Just wipe it clean while it’s still hot and let it dry completely before storing it! So easy!
The key to a great one pan wonder:
The key to a great one pan wonder is knowing exactly how to cook each ingredient going in the pan and exactly how long each ingredient will need. For this specific dish, I know the chicken will take the longest and it needs crispy skin. I know the Brown Butter Keto Biscuits will take the second longest and will also need a crispy bottom (without burning). The trick here though is that broccolini takes a very short time! So keep that in mind with your timing! One pan wonders can be very simple, don’t over think it, take your time, be prepared, and have fun with it!
How to cook my one pan chicken wonder:
This recipe starts in a cast iron or an oven safe pan. You’ll want your oven preheated to 375 and you’ll want your cast iron preheating on the stove over medium-high heat. You’ll add your butter and let it brown, this takes 3-4 minutes. Don’t over brown the butter because then it will make your food taste bitter. You’ll want to salt and pepper both sides of your chicken thighs. This will give the skin a delicious flavor. While the butter is browning, I add in a sprig or two of rosemary. This gives your butter amazing flavor, you can also add in a garlic clove as well, if you like garlic flavor! Once the butter is slightly browned add in your chicken, skin side down. Once the rosemary crisps up, remove it so it doesn’t get bitter. Once your chicken is nice and browned, about 5 minutes, flip it! Take half of a lemon and squeeze it over the top of the chicken. Then, ball up your biscuits and add them in! Let that sit undisturbed for about 3-4 minutes on medium heat. Then add in your broccolini. Make sure the broccolini gets well coated in butter. Then you will stick the entire pan in the oven for about 15 minutes or until your chicken reaches an internal temperature of 165. YUM! So easy!
Substitutions:
This recipe is so easy to substitute things in and out. You don’t like broccolini? Try asparagus or broccoli or even fresh green beans! These all have similar cooking times so it won’t mess up your timing! You don’t like chicken thighs? Do skin on chicken breast or pork chops. These will have similar cook times for the sear and won’t mess up your timing. Steak takes less time, so if that is something you want in your one pan wonder put it in the same time as the Brown Butter Keto Biscuits! Make sure you still get a good sear on each side of your steak 2-3 minutes per side will be perfect! Don’t like biscuits? Substitute for small chopped golden potatoes or sweet potatoes! Just make sure you cut them into 1/2 inch cubes so they cook thoroughly and have great color! YUM! Feel free to change it up! You can do it! Practice makes perfect!
