Herby Rosemary and Goat Cheese Frittata

With Christmas just a few days away, I am sure many are trying to figure out a delicious and quick breakfast for the entire family. I remember waking up on Christmas morning as a child, and my mom would have a full Christmas spread of meats, cheeses, chocolate milk, quiche, and pastries. My mom, like myself, loves being a homemaker and having everything perfect for special moments for her family. One breakfast item we always had was quiche, and they were always AMAZING! My absolute favorite for sure. This frittata reminds me of that delicious breakfast I had as a child. It’s creamy, rich, and full of flavor. This frittata is sure to be a crowd favorite.

This frittata comes together very quickly, and would be something simple to pop in the oven before the kids wake up! Therefore, it would also be an easy recipe to double or triple for whatever size family you have.

Step 1: Preheat & Prep

First, preheat the oven to 400º. Then, dice the tomatoes and goat cheese in to small cubes. Dice the rosemary.

Step 2: Whisk

In a large mixing bow, whisk the eggs and heavy whipping cream. Then, whisk for 30 seconds. This will create a nice fluffy egg base for the frittata. Then, add the salt and pepper to the mixture and whisk again for 30 more seconds.

Step 3: Rosemary, Spice, and everything GOAT CHEESE!

Next, pour the egg base into a buttered 8-inch round dish. Then, sprinkle the diced tomatoes and goat cheese into the egg mixture. Next, sprinkle the diced rosemary on top of the egg mixture last.

Step 4: Bake

Then, place the frittata in the oven at 400º for 30 minutes. Serve immediately!

Adding a protein:

This egg based frittata is delicious, but sometimes we all want a little extra protein. So, if you would like to add more protein, ham or bacon would be a great addition to this. Sprinkle whichever protein you would like on the egg mixture before you pop it in the oven. It would be a delicious addition to this frittata!

Notes

Make sure you whisk for 30 seconds and then add the salt and pepper and whisk for 30 more seconds. This will make a super fluffy frittata!
