Y’all these are so delicious! Growing up my mom always made key lime pie! Her key lime pie was always the best thing in the world! I still love that recipe today.
When my husband and I decided to start eating healthy, we really missed key lime pie! Sooo I experimented with making a coconut flour pie crust and with different healthy creams to make the filling. Finally I came up with these bars! They are so easy to make and taste so similar to a key lime pie! And the best news: THEY ARE GUILT FREE! I hope you love them!
Coconut Key Lime Pie Bars
Ingredients
- Crust Ingredients:
- 3/4 cup coconut flour
- 1/3 cup monk fruit sugar or 1 tbsp stevia
- 1 stick of butter
- 2 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla
- 1 large egg
- Filling Ingredients:
- 3 cans of full-fat coconut milk, refrigerated
- Juice of 4 limes
- 1/2 cup monk fruit sugar or 2 tsp stevia
- 2 tsp lime zest
Instructions
- Preheat the oven to 350. Grease a 9×9 baking dish. In a food processor combine coconut flour, monk fruit sugar, butter, baking powder, and salt. Combine until it forms into soft crumbs. Add in vanilla and the egg and combine again until it forms a soft dough. Roll the dough out and press into the bottom of your baking dish. Poke holes in the crust with a fork, at least 10 fork marks. Bake in the oven for 10-15 minutes or until the crust is browned on the edges.
- Meanwhile, begin making your filling. You will open up the cans of coconut milk and scrape the cream off the top. You can save the coconut water (in the bottom of the can) for something else (it makes a delicious tropical cocktail for later, wink wink). In your food processor, combine coconut cream, lime juice, lime zest, and monk fruit sugar. Combine until well whipped.
- When your crust is done, let it cool completely. Then pour your filling into your crust. Put your baking dish in the refrigerator to set for 45 minutes to an hour.
- Cut into bars and serve with a lime! Delicious every time!
