Maple Bacon Waffles with Applesauce Glaze

HELLO FALL! It is that time ya’ll! In Tennessee it is finally cooling off. Most of the time it take until the end of October to feel this good outside. BUT today it is a beautiful 70º and you can smell the crisp clean air. We slept with the windows down last night, so when I woke up I knew I wanted an amazing fall treat for our Saturday Brunch (we typically have a Saturday Brunch at our house-we are brunchy people). I got out of bed and went searching in our pantry for what to make and then the Maple Bacon Waffles with Applesauce Glaze were born! Ya’ll these ARE TO DIE FOR! They are that perfect balance of savory and sweet and you don’t feel like you ate cake for breakfast after eating them! They are absolutely wonderful! I hope you love them as much as I do!

Equipment for this recipe:

  • Mixer
  • Waffle iron
  • Blender
  • Saucepan
  • Oven (for easy bacon cooking)
  • Silicon Scraper

Ingredients for this recipe:

  • Flour
  • Sugar
  • Baking Powder
  • Salt
  • Eggs
  • Vanilla
  • Liquid Smoke (optional-adds a smoky flavor to the batter)
  • Maple Syrup
  • Milk
  • Butter
  • Bacon
  • Honeycrisp Apples (any apple will work but honeycrisp has the best flavor to me)
  • Pumpkin Pie Spice

Variations:

Pancakes- You could easily change this recipe into pancakes if you don’t have a waffle iron! Simple cook them in a frying pan on medium high heat!

Muffins- YES these can be made into muffins! Just pour your batter into muffin tins and cook on 350º for 15-20 minutes or until golden brown. Add the applesauce glaze on while the muffins are still hot!

Steps:

These waffles are simple and easy! First, preheat the oven to 375º and pop your bacon on an aluminum foil lined cookie sheet and cook until crispy. Meanwhile, chop the apple into small bits and put in the saucepan with 1 cup of water over medium high heat. Allow the apple to cook down for about 10 minutes. Then, mix all your dry batter ingredients together in a mixer. Slowly add in your wet ingredients and mix together. Then, chop your cooked, crispy bacon into bits. Dump the bits into your batter mixture and mix together. Then, in your cooking apples, add in your pumpkin pie spice, vanilla, butter, and sugar. Continue to cook these down for 10 more minutes, stirring frequently. While these are continuing to cook down, begin preheating your waffle iron. Cook your waffles. While the waffles are cooking, blend your apple mixture in a blender. When your waffles are done cooking, top them with butter, applesauce glaze, extra bacon bits, extra apple chunks, and maple syrup. Serve while warm!
