SOUP SEASON, SOUP SEASON, SOUP SEASON!!!! What a joyous time each year! It is my favorite! This soup is perfect for a “Taco” Tuesday night! It also is so cheap to make, at only $2.50 a serving! So cheap! I made 6 servings for my husband and I and we had leftovers for 2 days! It was great! This soup also saves so well! It is something we like to make and keep around the house for when hunger strikes and we don’t feel like cooking! It also keeps in the freezer for up to 2 months! So worth it! Absolutely delicious!
Equipment for this recipe:
- Large Pot
- Can Opener
Ingredients for this recipe:
- Ground Beef
- Taco Seasoning
- Beef Broth
- Rotel (mild or original-original is pretty spicy)
- Water
- Can Corn
- Black Beans
- Shredded Cheddar Cheese
- Sour Cream
- Tortilla Chips
Variations:
More Spicy- Add a diced jalapeño to the pot before letting simmer! This will make it very spicy! Also add some hot sauce to your bowl if you would like!
Less Spicy- Change out the Original Rotel for Mild Rotel. Also make sure the taco seasoning you are using is a mild taco seasoning!
Storing:
Refrigerator- This soup will save in an airtight container for one week. You can reheat it in the microwave to your desired temperature.
Freezer- This soup will save in a ziplock gallon bag for up to 2 months. To reheat, allow to thaw until it is no longer frozen. You can reheat in a saucepan over medium heat or in a microwave until you reach your desired temperature.
